


Recipe
2/3 cup brown rice flour
1 t xanthan gum
1/2 tsp salt
1/2 tsp baking powder
6 oz (half a bag) of semi-sweet chocolate chips
2 t oil
3/4 sugar
3/4 erythritol
1 T vanilla
1 t vanilla
1/4 water
4 oz. Tofutti cream cheese (half a container. i used non-hydrogenated)
1. Preheat your oven to 325 degrees.
2. Combine flour, xanthan gum, salt and baking powder then set aside.
3. Combine half the chocolate chips, oil, water, 1/2 cup sugar, 1/2 cup erythritol and 1 T vanilla. Microwave 45 seconds or until chocolate is mostly melted. Stir well. Add to dry ingredients and mix. If dough seems too dry add a bit more water.
4. Beat the cream cheese with the remaining 1/4 cup of sugar and 1/4 cup erythritol, and 1 tsp of vanilla. I also microwaved this for about 20 seconds so it would be easier to mix. I don't have a mixer.
5. Pour the brownie mix into a lightly greased muffin pan. Divide evenly (duh). Spoon an equal amount of cream cheese mix onto the top of each brownie bite.
6. Bake for 35-40 minutes, or until a toothpick is inserted in the middle and comes out clean.
